Cheese is smoked for six days and nights. We smoke two types; mature English Cheddar and Long Clauson's blue Stilton.
Garlic Bulbs are smoked for ten days to produce a wonderful subtle flavour.
A variety of locally made sausages, including Pork and Venison, Pork and Garlic and a very hot Chorizo, are smoked.
Three
different type's of Pate, Salmon (made from wild Alaskan Salmon) Kipper
and Mackerel, are made from our own smoked produce.
We also
make Salmon Fish Cakes using the Wild Alaskan Salmon and they are as
popular today as they were when we first started making them.
Our
Hocks of Ham are delicious, they are marinated in a mixture of Cider
and Black Treacle and then boiled for four hours, they are then covered
in Brown Sugar and flash roasted in the oven until they are black and
crispy.
Our Gammon are done in the same way and make a wonderful meal at Christmas or indeed at any time.
In season we will smoke game, Widgeon, Mallard, Pheasant and pigeon, although Pigeon is usually available all year around.
We have
a Mail Order service, using Royal Mail Special Delivery for orders up
to 2kg, anything over that we use an over night courier service. Both
are guaranteed next day delivery.

We take
most major credit/debit cards (not American Express) and you can place
an order with us seven days a week. There ares no deliveries on
Saturdays, Sunday or Monday.
